Innove Square Griddle
Ingredients
For Patties Covering:
3 no. s – large potatoes, cooked and mashed
3 tbsp. – arrowroot powder
to taste – salt
For Patties Stuffing:
½ cup – grated coconut, fresh
3 tbsp. – peanuts, roasted and coarsely crushed
3 tbsp. – cashewnuts, coarsely crushed
2 tbsp. – raisins, chopped
2 tsp. – sugar
1 tsp. – lemon juice
¼ cup – coriander leaves, chopped
2-3 no. s – green chillies, finely chopped
to taste – salt
Other Ingredients:
for brushing – oil
3 tbsp. – arrowroot powder, for coating
Directions:
- Take a large mixing bowl; add the potatoes, arrowroot powder, salt. Mix well and keep it aside.
- Then take another mixing bowl; add the coconut, peanuts, cashewnuts, raisins, sugar, lemon juice, coriander leaves, green chillies, salt. Mix well and keep it aside.
- Make medium sized balls from the potato mixture and flatten it. Add 1 or 2 tbsp. of the stuffing mixture over the potato mixture.
- Bring the edges towards the centre and gently seal them. Make sure the patties are sealed well so that it does not break when placed on the cookware.
- Coat the patties well with arrowroot powder and place them on a flat surface.
Preheat the square griddle on medium heat and brush some oil on it. - Then gently pick the patties one by one and place them carefully on the square griddle so that they do not break apart.
- Let it cook on one side for about 5-6 minutes; switch the heat to low.
- Then flip onto another side and let it cook for another 7-8 minutes.
- Once the patties is browned well on both the sides; transfer it into a serving plate.
- Serve hot with some green coconut chutney/ketchup/sauce.
